A tool to evaluate pomegranate biodiversity

Mixing our phytochemical, analytical, botanical and agronomical skills, we have applied our uHPLC-MSn for pomegranate polyphenols to some ancient Punica granatum cultivars growing in Northern Italy. More than 65 punicalagins, ellagic acid derivatives, flavonoids, anthocyanins and phenylpropanoids were simultaneously detected and fingerprints were used to discriminate different accessions. The phytochemical evolution of processed pomegranate juice

From the orchard to your glass… the road goes through few food technology processes and some phytochemical monitoring. We have investigated two important steps of pomegranate juice production, that is the separation of arils from peels and the enzymatic clarification of the juice.
