Why squander the aleurone layer?

Have you ever heard of aleurone? It’s a mixture of well-packed proteins found in granules stored in the outer coating of many seeds, including cereals and pulses. It forms a layer in outermost part of the endosperm, followed by an inner starchy endosperm. This layer is usually removed when white flour is produced, from wheat for example, but it may harbor some useful and healthy traits from a nutritional standpoint.
