Michele Tassotti

Michele Tassotti got his M.S. in Food Science and Technology in the University of Parma (Italy), Department of Food and Drug.

Throughout the bachelor degree, Michele focused his attention to study new chromatographic methods for the analyses of biogenic amine in wine. During the Master degree he was introduced to the metabolomics techniques and the MS/MS approaches to investigate the bioavailability of bioactive compounds.

In 2018 he collaborated with the Department of Nutritional Sciences of the King’s College London working, led by Prof. Ana Rodriguez-Mateos, on the study of anthocyanin-derived metabolites in plasma.

Currently he is a PhD student at the Laboratory of Phytochemicals in Physiology, led by Prof. Daniele Del Rio, and his research line is focused to study the bioavailability and the potential beneficial properties of coffee consumption.
